Puff pastry basket filled with chards and goat cheese

I really like puff pastry, used for doing savoury starters or mains. I also kept a good memory of the puff pastries starters that I used to buy when I was a student. So that is like that, that I decided to copy a traditional recipe with spinach and goat cheese and made puff pastry basket filled with chards and goat cheese. The goat cheese adds flavours to the whole dish but can be easily replaced by cheddar.

What do you need?

  • Puff pastry
  • 160 g chard leaves
  • 100g chard stems
  • 75 g of soft goat cheese
  • A couple of goat cheese slices
  • Handful of aromatic herbs such as parsley or basil
  • Salt and pepper
  • Egg yolk for brushing the puff pastry

How to make puff pastry basket filled with chards and goat cheese?

  • Wash carefully the chard
  • Separate the leaves from the sterns

! It is important to split the leaves from the stems as the stems need to be cooked longer that the leaves

  • In a pan with 1 tablespoon of oil, stir fry the chard stems for 10 minutes

! The stems are cooked when they are tender

  • Add the leaves and continue to cook for a couple of minutes
  • In a mixer, mix together the cooked chards with soft goat cheese, aromatic herbs and seasoning
  • Roll the puff pastry and cut it into square pieces
  • In the middle of each square piece, add a couple of tablespoons of the mix: chard and goat cheese
  • Add on top of it a slice of goat cheese and then foil the puff pastry
  • Brush the puff pastry with egg yolk and bake it for 30 minutes at 180°C
