Country style salad


The sun is back… and the salad is back in our plate. I decided to celebrate the coming back of the warm weather with a salad with potatoes and fried pancetta. The mushrooms are in for adding some freshness to the dish.

What do you need?

  • 1 medium size salad
  • 100 g of smoked pancetta
  • 150 g of fresh mushrooms
  • 4 medium size potatoes
  • Salt
  • Pepper
  • Olive oil
  • Juice of ½ lemon
  • Handful of parsley

How to make Country style salad?

  • Start by washing carefully the salad and the mushrooms
  • Peel the potatoes and steam them for 15 minutes
  • Fry the pancetta for 5 minutes at medium heat

! There is no need to add oil in the pan as the pancetta will release some fat while cooking

  • Slice the mushrooms
  • Once the potatoes have cooled down, slice them
  • In each plate, put a generous portion of salad
  • Then add the sliced potatoes
  • Add the sliced mushrooms and then the fried pancetta
  • Add the lemon juice

! The lemon juice will help to keep the mushrooms white

  • Then add salt, pepper, a dash of olive oil and freshly chopped parsley
