The sun is back… and the salad is back in our plate. I decided to celebrate the coming back of the warm weather with a salad with potatoes and fried pancetta. The mushrooms are in for adding some freshness to the dish.

What do you need?
- 1 medium size salad
- 100 g of smoked pancetta
- 150 g of fresh mushrooms
- 4 medium size potatoes
- Salt
- Pepper
- Olive oil
- Juice of ½ lemon
- Handful of parsley
How to make Country style salad?
- Start by washing carefully the salad and the mushrooms
- Peel the potatoes and steam them for 15 minutes
- Fry the pancetta for 5 minutes at medium heat
 There is no need to add oil in the pan as the pancetta will release some fat while cooking

- Slice the mushrooms
- Once the potatoes have cooled down, slice them
- In each plate, put a generous portion of salad
- Then add the sliced potatoes
- Add the sliced mushrooms and then the fried pancetta
- Add the lemon juice
 The lemon juice will help to keep the mushrooms white

- Then add salt, pepper, a dash of olive oil and freshly chopped parsley
