Grated raw winter vegetables salad

A simple and easy recipe for eating raw vegetables. It was the first time that I ate some raw parsnip and raw kohlrabi (kind of cabbage) and I really like the taste. The recipe is made with soya yogurt as a light and dairy free version but the starter can also be served with mayonnaise instead of soya yogurt

What do you need?

  • 1 carrot
  • 1 parsnip
  • 1 kohlrabi
  • 4 tablespoons of soya yogurt
  • Salt
  • Pepper
  • Handful of sesame seeds

How to make Grated raw winter vegetable salad?

  • Start by washing carefully all the vegetables
  • Peel them and then grate them
  • Divide the grated vegetables into 2 bowls
  • Then add the soya yogurt, salt and pepper
  • Sparkle some roasted sesame seeds on top

! For roasting the sesame seeds, just add them in a pan without any oil and let’s them roast for a couple of minutes at medium heat. Be careful as it can burn quite easily

  • Serve it straight away
