The traditional recipe with King Januray cabbage is roasted in the oven, stuff with some vegetable or meat or served boiled with sausage… but this kind of cabbage is pretty big and to eat it all, some new ways of cooking it is necessary. A few weeks/month ago, a soup and lasagne were shared; it is now time to share a mash recipe. Not the traditional mash potatoes one but a still comforting mash made with green vegetables.

This mash is perfect served with some Cumberland sausages or French “saucisse de Morteau” which is a large smoked sausage.

What do you need?

  • 100 g parsnip
  • 150 g sweet potatoes
  • 70 g carrots
  • 150 g King January cabbage
  • Soja milk
  • Soja cream
  • 1 teaspoon of mustard (optional)
  • Salt and pepper

How to make Green mash with King January cabbage, parsnip, sweet potatoes and carrots?

Wash cabbage, and place in a pan of boiling water for 15mins (with tsp bicarbonate soda – optional but helps to digest the cabbage)

Peel parsnips, sweet potatoes and carrots

Steam all the roots vegetable for 20 minutes

! Add one vegetable cube in the water for adding some flavours to the vegetables

Mix together the drained cabbage with the steamed vegetable, seasoning, soya cream, soya milk, mustard, salt and pepper

! Adding soya cream and milk will help first to have a smooth mash, more you are adding them, more your mash will be liquidly
