What to do with a vegetable box filled with aubergine, courgette… easy reply: make a tasty ratatouille. It is a kind of casserole dish full of flavours and so simple to make. The ratatouille can be served as a side dish or as a main dish with some brown and wild basmati rice.

What do you need?

  • 1 eggplant/aubergine
  • 2 courgettes
  • 1 medium size pepper
  • 1 onion
  • 1 can of plum tomatoes or a couple of fresh juicy tomatoes
  • 20 cl of vegetable stock
  • 2 tablespoons of olive oil

How to make a Ratatouille?

  • Start by washing carefully all the vegetables
  • Slice the eggplant and then put it in square pieces
  • Put the courgettes into square pieces

! If the courgette is organic, it is possible to leave the skin on otherwise it is better to peel it

  • Slice the pepper and remove carefully the seeds
  • Peel the onions and chop it
  • In a large pan, heat the olive oil
  • When the olive oil is hot, cook the chopped onion at medium heat for 5 minutes
  • Then add all the square pieces of eggplant, courgettes and pepper
  • Stir them for a couple of minutes
  • Then add the plum tomatoes, tomato purée (included in the can) and the 20 cl of vegetable stock
  • Cook it with a lid on and stir frequently for 30 minutes
  • Serve it really warm

! The recipe can be done with the Companion from Moulinex. Cook the onion with the olive oil for 5 minutes, at vit.2, 100°C then add the vegetable and stir them vit.2, 100°C for 3 minutes. Then add the tomatoes and vegetable stock and launch a program at vit.2, 95°C for 30 minutes
