Lunch box: salad with avocado, tomato and smoked salmon

Last time, I was on the tube for going to an important meeting and I was too stressed for listening some music so I decided to keep my mind occupied reading the newspaper left in the carriage. I was quite surprised to read about the “avocado hand” injury, it was not a joke but apparently as avocado is quite trendy to eat, more and more people are putting them in their diet… and they are not enough careful about their hand/finger when they are trying to remove the stone from the avocado, their knife is sliding to hand/finger. The newspaper was saying that it is the most middle-class disease ever.

This gave me the inspiration for my next lunch box, as I know that smoked salmon is quite a “catch” with the avocado, I decided to add both of them in a simple mix with roman heart lettuce and plum tomatoes. I topped the salad with a mix of salad seeds in order to have more goodness to the whole mix. It was a really tasty and healthy salad and it will, without doubt, become one of my “must have” recipe for this summer

What do you need?

  • 2 avocados
  • 2 large fresh plum tomatoes
  • 1 romaine heart lettuce
  • 250 g smoked salmon

How to do a salad with avocado, tomato and smoked salmon?

  • Salad seeds/mix of seeds
  • Slice the roman heart lettuce and wash it carefully
  • After draining the salad put the lettuce sleeve at the bottom of the lunch box
  • Wash and slice in pieces (as many as you like) the tomatoes and add them on top of the salad
  • Peel carefully the avocado and put in pieces
  • Add them to the salad with tomatoes
  • Slice in thin pieces the smoked salmon and add it to the salad
  • Top the salad with seeds mix

!   If you want to add more flavour to the seeds, don’t hesitate to roast them a few minutes in a pan without oil at medium heat

  • For the seasoning, use 3 tablespoons of olive oil, 1 tablespoon of balsamic vinegar, salt, pepper

! If you like it, you can add some dill, it is quite tasty with the salmon

! If you prepare your lunch box the day before,

  • keep the stone of the avocado and leave it in the salad that will avoid the avocado slices to turn black
  • put the seasoning aside for making sure that the vinegar doesn’t damage the salad
