Tabouleh is easy to prepare and really fresh to eat with a BBQ or as a lunch box. The main tip for it is to prepare it the day before in order to allow all the ingredient to take the flavour of the olive oil and citrus.

What do you need?

  • 150 g of couscous
  • 1 cucumber
  • 100 g of cherry tomatoes
  • 2-4 spring onions
  • 1 large lemon
  • 50 ml of olive oil
  • salt
  • pepper
  • fresh basil and parsley

How to do Tabouleh ?

  • Cook the couscous as it explained on the package

! Tip: I usually cook the couscous like that: I put 190 ml of boiling water on 150g of couscous with a pinch of salt, I cover it for 10 minutes and after I use a fork for seperating couscous grains

  • Slice in square pieces the cucumber

! Tip: you can choose to leave the skin or to peel the skin of the cucumber

  • Slice the cherry tomates on 2 or 4 pieces, it depends the size of the tomatoes
  • Slice the spring onions in small pieces
  • Press one large fresh lemon and add the juice in the preparation
  • Add the olive oil
  • Add pepper and salt
  • Add fresh basil and fresh parsley
  • Add the couscous (it must be cold)
  • Toss the tabouleh before let it cool in the fridge for one night
  • Serve it really cold
