Lunch Box: Salad with fresh salmon

A great salad for amazing lunch box, easy and healthy 🙂

PREPARATION: 20 minutes
COOK: 15 minutes

What do you need?

  • 2 fresh salmon steak
  • 100 g of baby corn
  • 100 g of mangetout or/and green beans
  • 10/15 cherry tomatoes
  • ½ or ¼ of iceberg lettuce
  • 2 teaspoon of mustard
  • 10 ml of lemon juice
  • 10 ml of olive oil

How to do the lunch box: salad with fresh salmon ?

  • Cook the salmon in a pan for 10 minutes with 25 cl of hot water (I usually use a pressured cooker)
  • Put in pieces the large leaves of the iceberg salad
  • Put in pieces your baby corn and mangetout
  • In a small pan, stir up the baby vegetables for 5 minutes
  • Slice in two or four parts all the cherry tomatoes
  • In your box, put at first the salad and the cooked salmon in pieces
  • Add the vegetables and tomatoes

! be careful: the vegetable need to be cold, if there are not, the salad will be cooked by them

  • Add the seasoning (mix together at first mustard and lemon and then add the olive oil)
