Lunch Box: Mix of wild rice with vegetables

What do you need?

  • 500 g of rice mix  (125 g of Camarge rice, 125 g of wild rice, 125g of brown rice, 125g of basmati rice)
  • 440 g of mix vegetables (2 chilli, 200 g mange-tout, 200 g mini corn, 40g broccoli)
  • Spring onion

How to make a Mix of wild rice with vegetables?

  • Cook the mix of rice for at least 35 minutes as it is explained on the packgaging

! Tip: I usually use my rice cooker for cooking this kind of mix in order to be sure that the rice is well cooked. If you don’t have one, the best is to take the maximum cooking time of the 4 variety of rice.

  • Slice in small pieces mange-tout and corn
  • Prepare the chilli

! Be careful : you need to remove the seeds of the chili and then slice the chilli in really small pieces

  • Cook the corn, mange-tout and chili in a pan with olive oil for 20 minutes

! Be careful: you need to stir fry the mix regularly in order to avoid to burn them

  • Cook the broccoli in a boiling water for 5 minutes

! Be careful:  5 minutes only in boiling water, if you let them too long in the boiling water, they lost their crunchy

  • Mix together the rice with the cooked vegetables
  • Add on top spring onions
  • Serve it hot or cold

! Tip: if you serve it cold, add on top a dressing (2 teaspoons of mustard mixed with 20 ml of lemon juice and then add 40 ml of olive oil)
