Lunch box: Salad with Chaource

This salad is complete and really tasty.

DIFFICULTY: StarWhat do you need?

  • 4 slices of bread (for the homemade croutons, but you can use ready to use one)
  •  Iceberg salad
  •  250g of green beans
  • 1 of Chaource
  •  4 – 8 Figs (I used frozen figs)
  • Brocoli
  • 250 g of cherry tomatoes
  • 8 slices of bacon
  • 50 ml of olives oil
  • 20 ml of lemon juice
  • 2 teaspoons of mustard
  • Mixed herb
  • Fresh parsley
  • Pine nuts

How to do a Salad with Chaource ?

How to make the homemade croutons ?

  • Slice your 8 slices of bread in square pieces
  • Put all the bread pieces on a baking tray
  • Add on top of the bread pieces olive oil and mixed herbs
  • Put the oven tray on the oven at 150°C for 15 minutes

How to make the Chource salad?

  • Wash, dry and slice the iceberg salad
  • Bring to boil 1 litre of water with salt
  • Add the green beans
  • Cover them and let them cook for 15/20 minutes

! Tip: you need to taste them before adding them on the salad, they need to be crispy but not too much

  • Dry the green beans and Leave them to cool down
  • Bring to boil water with salt
  • Add the broccoli
  • Cover it and cook it for 10 minutes
  • Dry the broccoli and Leave it to cool down
  • Slice the figs in 4 or 6 pieces
  • Slice the bacon in square pieces
  • Let them dried in a pan (without oil) on a medium heat for 10 minutes

! Becareful: you need to stir fry frequently

  • Slice the cherry tomato in two parts
  • In each lunch box, add the iceberg salad pieces
  • Add the green beans
  • Add the broccoli
  • Add the figs
  • Add Chaource pieces
  • Add the bacon
  • Add roasted pine nuts
  • Add the dressing (mix together first mustard and lemon juice, then add little by little the olive oil)
  • Add on top some homemade croutons
  • Add fresh parsley on top
  • Serve it chilled
