Lunch box: Bulgur salad with vegetables

Bulgur is a nice alternative to the semolina. This recipe is easy to make and it is really good to eat. The dried tomatoes add something special to the taste of the salad.

What do you need?

  • 200 g of bulgur wheat
  • 200 g of dried tomatoes
  • 250 g of mozzarella
  • 20 black olives
  • Spring onions
  • 10 ml of lemon juice
  • Salt
  • Pepper

How to do Bulgur salad with vegetables ?

  • Cook the bulgur as it is explained on the package

! Tip: usually, you need to bring boil twice the volume of the bulgur in water and then add the bulgur and let it simmer for 35 minutes

  • Cut in small pieces the dried tomatoes
  • Slice in two parts the black olives
  • Cut in small pieces the mozzarella
  • Mix them all together in one small bowl until the bulgur becomes cold

! Be careful: don’t mix the vegetable and mozzarella with the bulgur when the bulgur is hot because that will melt the mozzarella

  • Add the mix (vegetables + mozzarella) to the cold bulgur
  • Add the seasoning: mix together 3 tablespoons of the oil contained on the dried tomatoes can, and the lemon juice
  • Add salt, pepper and spring onions
  • Serve it cold
