Lunch Box: Spring salad

A great salad for amazing lunch box, easy and healthy 🙂

COOK: 20 minutes

What do you need?

  • 6 small new potatoes
  • 100 g of green beans (fresh or frozen)
  • 10/20 radish
  • 2 eggs
  • 1/2 iceberg salad
  • 1 teaspoon of mustard
  • 10 ml of lemon juice
  • 10 ml of olive oil

How to do the lunch box: spring salad ?

  • Cook the new potatoes for 15/20 minutes in water

! Tip: the potoatoes are ready when a knife can enter smoothly in the potatoes

  • Cook the eggs in water for 10 minutes
  • Cook the green beans for 5 minutes in a boiling water
  • Slice thinly the radish
  • Wash the iceberg salad and put it in pieces
  • In a large bowl, mix the salad with the radish
  • Then add the green beans

! Tip: I prefer cut the green beans in order to have middle size pieces of beans

  • Add the potatoes in pieces

! Tip: I didn’t peel the potatoes

  • Peel the eggs and put them in pieces
  • Add them in the salad
  • In a small bowl, mix mustard with lemon juice
  • Add little by little the olive oil
  • Add the sauce to the salad
