Lunch box: Gnocchis with vegetables


I love gnocchis because it is really easy to do but it is quite borring to eat if you are not a little bit imaginative. So last time, I decided to add tomatoes, courgette and mozzarella, so delicious

COOK: 15 minutes

What do you need?

  • 300 g of gnocchis
  • 250 g of cherry tomatoes
  • 1 courgette
  • 1/2 mozzarella ball
  • 1 tablespoon of olive oil
  • salt
  • pepper
  • basil

How to do the Lunch box: Gnocchis with vegetables?

  • In a pan, put some water and bring it to boil
  • when the water is boiling, put the cherry tomatoes in the boiling water
  • after 1 minute, remove the cherry tomatoes from the water and peel them
  • then slice them in 2 parts

! Tip: I usually peel the cherry tomatoes,because it is more smooth with the gnocchis

  • Cook the gnocchis as it is explained on the package

! Tip: usually, you need to bring water to boiled and then put the gnocchis for 4 or 5 minutes until they go up on the pan

  • Wash a courgette and cut it in square piece
  • In a large pan, put some olive oil and when it is warm add the courgette pieces
  • Cook the courgette pieces for 5 minutes until the pieces become tender

! Beware: don’t forget to stir the courgette pieces in order to avoid to let them burn

  • Then add the cherry tomates
  • Then add the gnocchis
  • Add salt and pepper
  • Slice the mozzarella in square pieces
  • Add them in the pan with gnocchis, tomatoes and courgettes
  • Cook them for 4/5 minutes
  • Serve it with basil
