Mini chocolate mousse

I love chocolate mousse and enjoy a strong flavour of chocolate.I have used small verrines for presenting it but you can do in ramequins as well.

PREPARATION : 10 minutes + 2 h 30 in a fridge
COOK : 0 minute

What do you need ?

  • 175 g dark chocolate
  • 3 eggs
  • 60 g sugar
  • sugar sparkles for decoration

How to make mini Chocolate mousse glasses?

  • Put the 3 eggs white with a pitch of salt in the fridge for 15/30 minutes
  • Mix in a large bowl the eggs yolk with sugar
  • Beat the egg whites until it becomes stiff
  • Put the dark chocolate with one tablespoon of water in a microwave recipient
  • Heat the preparation for 1 or 2 minutes on a microwave at 600 W
  • Add the chocolate in the large bowl where sugar and eggs yolk were mixed
  • Gently add eggs white in the chocolate.

! Tip: Add eggs white with a flexible rubber spatula

  • Pour the chocolate mousse in the mini verrines
  • Keep them in a fridge for 2 hours
  • Before serving, add sugar sparkles on the top of each verrine
