Apple and rhubarb tartelettes

Autumn is a great season for eating apples. Quite bored to eat apple? so try this apple and rhubarb tart, that is really delicious. You can add a ice-cream ball on it and it is a great dessert.

I included in this recipe, the instructions to prepare a homemade pastry but you can use a ready-rolled pastry.

PREPARATION: 20 minutes for the pastry + 30 minutes in the fridge + 20 minutes for the apple and rhubarb tart
COOK: 20/25 minutes at 200°C

What do you need ?
For the pastry:

  • 50 g corn flour
  • 125 g self-rising flour
  • 75 g butter or light butter
  • 4,5 cl cold milk
  • 75 g sugar
  • 1 teaspoon vanilla extract

For the apple and rhubarb tart:

  • 3 apples
  • 2 – 4 rhubarb sticks
  • 4 teaspoons sugar

How to do the homemade pastry?

  • Mix together corn flour, self-rising flour, sugar
  • Cut thinly the butter and add it in the preparation

! Tip: Knead the pastry with your fingers

  • Add the vanilla extract and the cold milk

! Tip: add the cold milk little by little

  • Knead again the pastry with your fingers
  • Wrap it in a plastic film and let it cool in a fridge for 30 minutes

How to do the apple and rhubarb tartelles?

  • Spread the pastry
  • Put the pastry in small pie dishes
  • Prick the pastry with fork
  • Put it in the oven for 5 minutes at 200°C
  • Peel the apples
  • Peel the rhubarb sticks
  • Cut the apples into a fine julienne
  • Cut the rhubarb stick in small pieces
  • In each piece of pastry, mix apple fine julienne with rhubarb pieces
  • Add sugar on the top. That will add a caramelised taste to the apple and rhubarb tartelettes
  • Bake the tartelettes for 20/25 minutes in the oven at 200°C
