Lunch Box: Brown basmati and wild rice with carrots and mushrooms

What do you need?

  • 150 g Mix of Brown basmati and wild rice
  • 350 g carrots
  • 125 g chestnuts mushrooms
  • 1 teaspoon salt
  • Chives
  • Oilive oil
  • Parsley

How to make a Brown Basmati rice with mushrooms and carrots lunch box?

  • Cook the rice as it is written on the package

! Tip: you can use a rice cooker; the flavours are more intense than when you cook it in a pan with boiled water

  • Peel the carrots and slice them in square pieces
  • In a large pan, bring 1.7 litre of salted water to boil
  • Put the square carrots pieces in the boiling water and let it cook for 45 minutes

! Tip: don’t forget to cover them for accelerating the cooking process

  • Wash and slice the mushrooms
  • In a pan, put some olive oil and when the oil is hot, add the mushrooms
  • Cook them during 15 minutes on medium heat and add some parsley

! Tip: at the beginning the mushrooms used a lot of space in your pan but at the end they are really small

  • In a large pan, put some olive oil and when the oil is hot, add the mushrooms, the carrots and the rice
  • Let it cook 15-20 minutes on medium heat and add some chives

! Be careful: don’t forget to stir the mix in order to avoid to burn the carrots or the mushrooms
