Little Men Brioche

A really nice treat for your weekend breakfast

SERVES: serveserve
PREPARATION: 25 minutes + 1h 40 in the bread maker
COOK: 15 minutes at 220°C

What do you need ?

  • 1 egg
  • 25 ml milk
  • 3 tablespoon of lemon juice
  • 25 g butter
  • 1 teaspoon of salt
  • 25 g sugar
  • 160 g plain flour
  • ½ instant yeast sachet
  • Chocolate chips for decorating

How to make the Little Man Brioche, flavour almond?

  • Put all the ingredients in your bread maker in the exact order of the list displayed above
    ! Beware: yeast must not be in contact with salt and water
  • Use the bread dough program of your bread maker
    ! Beware: check at the beginning of the program if the dough is like a ball, if it is not the case add a little bit more water
  • Put the bread dough outside
  • Roll out the dough with a rolling pin on a floured surface
  • Cut the dough with a “little man” cookie cutter
  • Add some small chocolate chips for decorating your little men
    Tips Tip: put 2 small chocolate chips on its head for the eyes or/and 3 small chocolate chips for its shirt
  • Brush the top of each little man with a mix of one egg yolk and one tablespoon of water
  • Let the Brioche rise around 40 minutes in a warm environment
  • Cover it with a tea towel
  • Heat the oven at 250°C for 10/15 minutes
    Then put the brioche in the oven at 220°C for 15 minutes
    Tips Tip: if you want to have a crispy Brioche, put an oven tray in the oven during the pre- heating phase and after the pre-heating, add some cold water (about 20 cl) in the oven tray. The steam will add crisp to your bread
  • Then put your hot Brioche on a shelf to let it cool down
