This is a really tasty and airy Brioche.

PREPARATION: 10 minutes + 1h 40 in the bread maker
COOK: 15/25 minutes at 220°C

What do you need ?

  • 40 ml milk
  • 25/30 ml water
  • 1 tablespoon almond extract
  • 41 g butter or light butter
  • 38g sugar
  • 1 oeuf
  • 1 teaspoon salt
  • 250 g plain white flour
  • ½ instant yeast sachet

How to make the Brioche, flavour almond?

  • Put all the ingredients in your bread maker in the exact order of the list displayed above
    ! Beware: yeast must not be in contact with salt and water
  • Use the bread dough program of your bread maker
  • Put the bread dough outside and make two balls of dough: one big (2/3 of dough) and one small (1/3 of dough)
  • Put the big ball of dough in a Brioche pan and dig a small hole in the middle
  • Put the small ball of dough in the hole
  • Brush the top of the brioche with a mix of one egg yolk and one tablespoon of water
  • Let the Brioche rise around 40 minutes in a warm environment
  • Cover it with a tea towel
  • Heat the oven at 250°C for 10 minutes
  • Then put the brioche in the oven at 220°C for 15/25 minutes
    Tips Tip: if you want to have a crispy Brioche, put an oven tray in the oven during the pre- heating phase and after the pre-heating, add some cold water (about 20 cl) in the oven tray. The steam will add crisp to your Brioche.
  • Then put your hot Brioche on a shelf to let it cool down
