Panna Cotta with Exotic Fruits

This dessert is so fresh and the Panna Cotta is really tasty.

PREPARATION :30 minutes + 2 hours in the fridge

What do you need ?

  • 2 papaya
  • 1 or 2 mango
  • 2 passion fruits
  • 40 g of brown sugar
  • 1 tablespoon of honey
  • 30 ml of orange juice
  • 15 cl of liquid cream or soya cream
  • 10 cl of milk
  • 2 or 3 teaspoon of vanilla flavour
  • 1 g of agar-agar
  • 1 tablespoon of sugar

How to make the exotic soup?

  • Peel the papaya and one mango
  • Put them in small pieces
  • Put them in a pan with brown sugar and honey
  • Cook them for 15 minutes in stirring it frequently
    ! Beware: don’t let stick the soup in the pan
  • Then mix the soup with orange juice in order to do a soup
  • Put the soup in the bottom of transparent ramekins

How to make the Panna Cotta?

  • Mix the liquid cream with the milk in a pan
  • Add 1 tablespoon of sugar and vanilla flavour
  • Add the agar-agar and mix it
  • Put in on heat and bring the preparation to boiling point
  • And simmer it gently for 2 minutes
  • Then put the Panna Cotta on the exotic soup
  • Let it cool down and put it in the fridge for 2 hours

How to do the exotic fruits coulis?

  • Extract the juice from the mango with a food processor or with a centrifuge
  • Add the juice of the passion fruits
    ! Tip: you can add some brown sugar if the juice is not enough sweet
  • Strain the juice and keep it cold
  • Serve the exotic soup with Panna Cotta and with the exotic coulis on the top
    ! Tip: you can add some mixed peel on the top for decorating
  • Serve everything chilled
