Salmon quiche

Samon quiche is a easy, tasty and healthy dish. It is really convenient for preparing your lunch box.

SERVES: serveserve
PREPARATION: 5 minutes + 35 minutes for the homemade dough
COOK: 15/20 minutes at 180°C

What do you need?
For salmon quiche:

  • 1 short crust pastry
  • 100 g smoked salmon
  • 1 egg
  • 2 teaspoon of plain flour
  • 15 cl of light cream or soya cream
  • Pepper
  • Dill

For the homemade short crust dough:

  • 25 g corn flour
  • 75 g self-rising flour
  • 35 g butter or light butter
  • 35 ml water
  • a pinch of salt

How to make the homemade short crust dough?

  • Mix together corn flour, self-rising flour, salt
  • Cut thinly the butter and add it in the preparation
    ! Tip: Knead the pastry with your fingers
  • Add the cold milk
    ! Tip: add the cold milk little by little
  • Knead again the pastry with your fingers
  • Wrap it in a plastic film and let it cool in a fridge for 30 minutes

How to make the salmon quiche?

  • Spread the pastry
  • Put it in a pie pan
  • Prick the pastry with fork
  • Bake for 10 minutes in the oven at 150°C
  • In a large bowl,  mix the egg with the soya cream
  • Add the plain flour and mix it again
  • Add pepper and dill
    ! Tip: don’t hesitate to add pepper that will add some flavor to the quiche
    ! Be careful: don’t add salt because the smoked salmon is already salty
  • Cut the smoked salmon in a pieces
  • Put the salmon slices on the pastry
  • Add the last preparation generously on top the salmon
  • Put the quiche in the oven for 15/20 minutes at 180°C
  • Serve it hot or cold.
