Mango and coconut light dessert

I like this dessert because it is really quick to do and it is light (no sugar inside). The value-added to this dessert is that is really pretty in a transparent ramekin and if you want, you can bring it for your lunch at the office. It is a nice tasty healthy treat, isn’t it?

What do you need ?

  • 1 mango
  • 2 teaspoon honey
  • 6 tablespoon light natural yoghurt
  • 2 tablespoon coconut sugarcane vinegar (Carib-gourmet)
  • 2 pinches of coconuts powder

How to make a Mango and coconut light dessert?

  • Peel the Mango and cut it in small squares
  • Put ¾ of the Mango squares in the bottom of two ramekins
  • In a bowl, mix the light natural yogurt with the coconut sugarcane vinegar
  • Taste it before adding on the Mango
    ! Tip: if you think that the taste is too sour, don’t hesitate to add brown sugar
  • Add the mix on the Mango pieces
  • Add the spare Mango pieces on the top of the yoghurt
  • Add honey
  • Add a pinch of coconuts powder on each top of your ramekin
  • Serve it or put in the fridge before eating
