French gingerbread teddy bear with creamy chocolate in the middle

I created this recipe for a French cooking contest and the taste is really great.

SERVES : serveserve
PREPARATION : 20 minutes + 30 minutes in a fridge
COOK : 15 minutes at 200°C

What do you need ?

  • 1 egg
  • 20 g sugar
  • 10 g plain flour
  • 5 g self-rising flour
  • 20 g French gingerbread powder
  • 20 g butter
  • chocolate pieces as many as you have teddy bear moulds

How to make French gingerbread teddy bear with creamy chocolate in the middle?

  • Put the chocolate pieces in the freezer
    ! Tip: we will freeze the chocolate that will help the chocolate to become creamy when we will put it the oven in the middle of the cake
  • Put the butter in a microwave bowl and put it in the microwave for 1 minute at 600 W
  • Mix together the egg with butter
  • Add the sugar and the French gingerbread powder
  • Add gently the flours (plain and self-rising)
  • Mix all together
  • Put some oil in the teddy bears moulds
    ! Tip: if you don’t do it, it is possible that you can’t put the cake out of the the mould properly
  • Put the mixture in the teddy bears moulds at the 1/3 of the moulds
  • Add the chocolate pieces in each teddy bear moulds
  • Put more mixture in the mould
    ! Tip: don’t exceed half mould size with the mixture. If you don’t do that, when the mixture will grow, that will go out of the mould and your teddy bears won’t be perfect
  • Put the mould 30 minutes in the fridge
  • Then put the mould in the oven for 15 minutes at 200°C
  • Let them cool down and put them out of the mould carefully

Small variation:
If you are like me: a chocolate addict

  • Put 50 g of chocolate in a microwave bowl with a half teaspoon of water and put it in the microwave for 1 minute at 600W
  • Use a flexible spatula for “working” the chocolate and add small quantity of water if the chocolate is not enough smooth
  • Put a thin layer of chocolate in the teddy bears mould
  • Add the teddy bear cake
  • Put more chocolate on the top
  • Put in the fridge during 1 night
