Couscous with vegetables and dried fruits

I like this mix of vegetables and dried fruits in this couscous. I discovered this mix when I ate in a Marrocan restaurant.

What do you need?

  • 200 g of chicken thigh
  • 2 carrots
  • 1 courgette
  • 5 figs (I took frozen figs)
  • a handful of dried grapes
  • a handful of dried apricots
  • 1 vegetable cube
  • 1 chicken cube
  • 1 tablespoon of tomato juice
  • Some chopped tomatoes
  • 2 teaspoon of Tabasco
  • Salt
  • Pepper
  • Cinnamon
  • 100 g couscous semolina

How to make a Couscous with vegetables and dried fruits?

  • Brown the chicken in olive oil over a medium heat in a large pan
  • Peel the carrots and cut them in small pieces
  • Cut the dried apricot in two parts
  • Add 30 cl/40 cl of boiling water in the pan, with vegetable and chicken cube
  • Add carrots, dried figs, dried apricots, tomatoes and tomato juice
  • Add salt, pepper and cinnamon
  • Add Tabasco
  • Simmer the preparation for 1 hour
  • Cut the courgette in small pieces without peeling it
  • Then add the courgette at the preparation
  • Simmer the preparation for 20 minutes more
  • Put the dried grapes in boiled water in order to let them grow
  • Prepare the couscous semolina as it explained on the package
    ! Tip: for mine,  I put 125 ml of boiled water on the semolina, I cover it for 10 minutes and then I separe the grains with a fork
  • Add dried grapes in the semolina
  • Serve the semolina and add chicken with vegetables and sauce
  • Serve it hot.
