This is a nice soup if you like mushrooms. You can easily serve it as a starter or as a full winter dish.

What do you need ?

  • 250 g closed cup mushrooms
  • 1 tablespoon olive oil
  • 2 tablespoon plain flour
  • ½ litre water
  • 2 vegetable cubes
  • 100 g soft cheese
  • salt
  • pepper
  • parsley

How to make soup of Mushrooms?

  • Wash and slice thinly the mushrooms
  • Heat the oil oil in a large non-stick frying pan
  • Let the mushrooms melt
  • Add salt, pepper and parsley
  • Simmer the preparation for 10/15 minutes
    Be careful Beware: Stir up the preparation frequently in order to avoid to burn the mushrooms
  • Boil ½ litre of water
  • Dilute the vegetable cubes in the boiled water
  • Put this preparation on the mushrooms
  • Add plain flour and stir up energically the preparation
  • Simmer the preparation for 15 minutes
  • Add the soft cheese
  • Mix the soup
  • Serve it immediately with milk or liquid cream
