French Rasberry Macarons

The recipe of French macarons is sophisticated. The result is really wonderful but you but you need to schedule time for doing it because the hull of macarons must be “croûter” during one hour in a dry environment.

This recipe is quite difficult as it depends a lot about the environment (dry room, medium hot for the oven…)

PREPARATION : 30/40 minutes + 1 hour for letting them “croûter”
COOK : 12 minutes at 150°C

What do you need ?

  • 2 eggs white
  • 60 g almond powder
  • 110 g icing sugar
  • 20 g fine granulated sugar
  • 1/2 teaspoon of red coloring
  • Rasberry jam

How to make « French Macarons »?
1. How make the hulls of the French Macarons?

  • Put the 2 eggs white with a pintch of salt in the fridge for about one hour
  • Sift 60 g almond powder and 110 g icing sugar. If your almond powder is not enough fine, mix it with an electric mixer
    ! This step is really important as if the almond powder and the icing sugar are not fine enough, the hulls of the macaroons won’t be smooth enough
  • Put the fine almond powder and the icing sugar in an oven tray and put it in the oven for 7 minutes at 150°C
    ! Check it regularly in order to avoid to burn it
  • Let it to get cool down
    ! Beware, not more than 30 minutes because after 30 minutes, air can infiltrate in the mixture and powder with air will create “creaked” hulls
  • Beat the egg whites until it becomes stiff and add the sugar in it
  • Add around half of a teaspoon of the red coloring
  • Gently add the fine almond powder and the icing sugar. Add it with a flexible rubber spatula
  • Put all the mix in a pastry bag when the mixture is smooth
  • Put a piece of baking parchment in an oven tray
  • Pipe it on the baking parchment in 3 cm circle.
    ! Tip: Put a space around 3 cm between two circles because the mixture will be spread
  • Put French macarons in a dry room for 1 hour in order to allow the hull of macarons to “crouter”
  • Heat the oven to 150°C during 10 minutes
  • Put the oven tray with the macarons in the oven for 10/12 minutes
    ! Beware: check regulary the hulls in order to avoid burning them
  • Unstick the hulls with boiled water that you will pour between the backing parchment and the oven tray. The steam will help to unstick the hulls

2. How make the French Macarons?

  • Spread one out of two hull with raspberry jam then put sandwich the two hulls together
  • Store them in a airtight container.

Small variation:
You can fulfill hulls with strawberry jam too.
