Courgette Pie

This pie is really easy to cook and it is tasty. Even if you are not particularly a great fan of this vegetable, you will enjoy this new recipe.

You can eat it hot or cold. This pie can be a nice meal for lunch; you just have to warm it in microwave.

PREPARATION: 20 minutes
COOK: 30 minutes

What do you need?

  • 1 short crust pastry
  • 1 big courgette
  • 50 g bacon
  • 1 egg or 2 egg whites
  • 5 tablespoons liquid cream or soya cream
  • 2 tablespoons milk
  • 1 teaspoon flour
  • 70 g grated cheese
  • 2 or 4 pinch nutmeg
  • a pinch of salt
  • pepper

How to do the Courgette pie?

  • Peel the courgette and cut it in medium bits
  • Boil the courgette pieces in a large saucepan for 15 minutes
    Tip Tip: you can check with a knife whether your courgettes are ready to be used:  if the knife softly reaches the flesh of the courgettes, then they are ready to be used

While the courgettes are cooked, you can prepare the mixture:

  • Put in a bowl the egg with flour, liquid cream,
    milk, pepper, salt and nutmeg
  • Mix them together
  • Spread the shortcrust pastry in a pie dish and prick crust with fork in several places
  • Put in the oven for 10 minutes at 200°C
  • Drain the courgette pieces
  • Cut the bacon in small bits
    Tip Tip: Put them in a sauce pan without oil or butter at a medium heat for 5 minutes in
    order to take of the fat
    Be careful Beware: you have to stir them frequently in order to not burn them
  • Put the courgette pieces at first in the pie
  • Add the bits of bacon
  • Add the grated cheese
  • Add the mixture
  • Put the pie in the oven for 30 minutes at 220°C
