Lunch box: Courgette Quiche with vegetable dough

This quiche is really easy to cook and it is tasty. Even if you are not particularly a great fan of this vegetable, you will enjoy this new recipe.

You can eat it hot or cold. This quiche can be a nice meal for lunch; you just have to warm it in microwave.

PREPARATION: 20 minutes
COOK: 30 minutes

What do you need?

For the short-crust pastry:

  • 75 g green vegetables flour
  • 15 g corn flour
  • 15 g self-raising flour
  • 45 g butter or light butter
  • 25 ml water

For the quiche:

  • 1 big courgette
  • 50 g bacon
  • 1 egg or 2 egg whites
  • 5 tablespoons liquid cream or soya cream
  • 2 tablespoons milk
  • 1 teaspoon flour
  • 70 g grated cheese
  • a pinch of salt
  • pepper
  • parsley

How to do a shortcrust pastry with vegetable flour?

  • Mix in a large bowl: corn flour, self-raising flour, vegetables flour, butter
  • Add the salt
  • Knead the pastry with your fingers
  • Add water
  • Knead gently the pastry
  • Wrap it in a plastic film and let it cool in a fridge for 30 minutes

How to do the Courgette quiche?

  • Peel the courgette and cut it in medium bits
  • Put the bacon in small pieces
  • Boil the courgette pieces and the bacon in a large saucepan for 15 minutes

! Tip: you can check with a knife whether your courgettes are ready to be used:  if the knife softly reaches the flesh of the courgettes, then they are ready to be used

While the courgettes are cooked, you can prepare the mixture:

  • Put in a bowl the egg with flour, liquid cream,
    milk, pepper and salt
  • Mix them together
  • Spread the shortcrust pastry in a quiche dish and prick crust with fork in several places
  • Put in the oven for 10 minutes at 200°C
  • Drain the courgette pieces and the bacon pieces
  • Put the courgette pieces at first in the pie
  • Add the bits of bacon
  • Add the grated cheese
  • Add the mixture
  • Add parsley
  • Put the quiche in the oven for 30 minutes at 220°C
